
Ingredients
- 1.5kg potatoes
- 100g butter
- 8ml chicken or vegetable stock
- 1 tbsp thyme leaves (or mix of thyme and marjoram)
- 4 garlic cloves
- 1 cup grated cheese

Prep
- Grease a deep pan with butter and line with parchment paper
Combine Ingredients
- Melt half of butter (50g) in a saucepan, add garlic (4 cloves), stir into stock (8ml) and spices (1 tbsp)
- Layer potatoes, butter mix, potatoes, butter mix, potatoes, cheese, repeat …

Cook
Stage 1
- Cook at 180f for 1hr. Use steam oven or cover with foil. Use skewer to make sure potatoes cook through.
- Weigh down to compress while it cools. Refrigerate over night

Stage 2
- Cut into pieces (about 12), then melt and brush on the rest of the butter on each piece.
- Roast at 200c for 40min
